It’s the last Meal Plan Monday of 2011. Where oh where did this year go? It’s official. Hubby and I are stuffed full of sugar. Time to go cold turkey again and work this out of our system. We splurged, perhaps I more than he, but man was it yummers…I had marshmallows, iced tea, graham cracker toffee stuff, oatmeal chocolate chip cookies (good for bringing down cholesterol???), macaroons, baklava, oreos…what else? Probably more than I can think of right now. Yikes. Scared to step on the scale. I really need to lose about 10 pounds right now. This week hasn’t started off with healthiest of recipes but I’m going to see how I can remedy that. Good news is that I think I have even my lunches ready to go this week. Here’s the plan:
Sunday: Easy Spinach Lasagna with White Sauce (lasagne? My MIL and I had a whole conversation on how to spell that word. Still don’t know which one I should use), tomato & avocado salad, and garlic knots. I found this recipe on Allrecipes.com and modified it a bit by sauteeing the mushrooms with some olive oil, onions, and garlic, lightening up the recipe by using cottage cheese instead of ricotta, and then substituting zucchini for carrots. The taste was pretty good but it WAAAAAY too saucy. It felt like lasagna soup and was a little embarrassing since the in-laws were over. Next time I’ll cut the alfredo sauce in half, probably. But I think I will try it again at some point. Had it again for lunch on Monday. Garlic knots were good!
Monday: Homemade pizza & salad. Old standby was a quick, easy meal for the in-laws and us. My mom had sent some homemade baklava with me so we took that out along with some cookies I had baked on Saturday for dessert.
Tuesday: Grill Cheese, Fries, & Broccoli
Wednesday: Vegan Lentil, Kale, and Red Onion Pasta
Thursday: Vegetarian Chili
Saturday: New Year’s Eve party with friends
